Serves: 25 (1/4-Cup) Servings
Exchanges: 1/2 Meat, 1 Fat
Ingredients:
1/4 cup water 2 envelopes unflavored gelatin 2 cups reduced fat mayonnaise 1/2 cup chili sauce
1/2 cup ketchup
2 tsp. sweet pickle relish
Dash Worcestershire sauce
1/4 cup minced celery
1/4 cup minced onion
1/4 cup minced bell pepper
2 tsp. prepared horseradish
2 cups chopped seasoned boiled shrimp
Preparation:
Place water in saucepan and sprinkle with gelatin. Let stand 1 minute to soften. Warm over medium heat, stirring until gelatin dissolves. In a medium bowl add remaining ingredients and stir until well blended. Whisk in gelatin mixture, blending well. Pour into a 6-7 cup mold and chill overnight. Unmold onto a garnished platter and serve with wheat crackers.
