Ingredients:
1 bunch of fresh spinach (ripped)
1 cup sliced button mushrooms
1/4 cup goat cheese or freshly grated parmesan (not the stuff in the can)
1/4 cup fat-free balsamic vinegar dressing
Preparation:
Combine spinach, mushrooms and cheese in a large bowl, then toss with dressing. Refrigerate for 1/2 hour; serve cold. Sprinkle a little Parmesan cheese on top. Can be served with 1/2 hard-boiled egg on the side.
Nutritional Information Per Serving: 161 Calories; 10g Fat (56.9% calories from fat); 11g Protein; 7g Carbohydrate; 2g Dietary Fiber; 30mg Cholesterol; 197mg Sodium.
