View Full Version : Peachy Grilled Chicken Salad

Serves: 6

Ingredients:
1 cup chopped frozen peaches, slightly thawed
1 tablespoon chopped crystallized ginger
1 (9-ounce) jar mango chutney*
2 tablespoons low-sodium soy sauce
3 cups chopped cooked chicken
1 cup chopped sweet red pepper
1 (8-ounce) can chopped water chestnuts
Boston lettuce leaves

Preparation:
Combine first 4 ingredients in small saucepan. Bring to a boil, reduce heat, and simmer until thickened. Let cool. Combine remaining ingredients, except lettuce, in a large bowl, stirring well. Cover and chill thoroughly. Line plate with lettuce leaves and top with chicken salad.
