Ingredients:
1-1/2 cups crushed pineapple
1 cup hot water
1 small package lime (or any flavored) sugar-free gelatin
1 (8 ounce) package lite cream cheese
1 package sugar substitute
1 teaspoon vanilla
7 ounces Diet 7-Up
Preparation:
Drain pineapple, saving juice. Add enough hot water to juice to equal 1 cup. Bring to a boil. Pour into blender and add gelatin and cheese. Blend on medium speed about 2 minutes. Add sugar substitute, vanilla and 7-Up. Blend on high speed for 1 minute. Add pineapple and blend on low speed for 1 minute. Pour into dish or mold and chill for 5 hours.
Variation:
If non-fat cream cheese is used, no fat is counted in the exchanges.
