Serves: 8 1-1/2 cup servings
Ingredients:
1 tablespoon olive oil
1 cup chopped onion
1 cup chopped celery
1 cup chopped bell pepper
1 teaspoon chopped garlic
2 quarts water or chicken broth
ham bone
2 15-ounce cans seasoned Northern Beans
1 cup chopped ham
1 teaspoon black pepper
1 14.5-ounce can diced tomatoes, drained
1 8-ounce can tomato sauce
Preparation:
Heat a large saucepan over medium heat and add olive oil. Add onion, celery, and bell pepper and saute for 2-3 minutes. Add garlic and saute for 1 minute more. Add water or broth and ham bone and bring to a boil, reduce heat and simmer for 1 hour. Remove bone and discard. Add remaining ingredients and simmer for 20 minutes.
Exchanges: 1 meat, 1 1/2 breads, 1 vegetable
