6 Tbsp. washed and drained raisins
2 cups grated carrots
1 cup drained, crushed pineapple
1/3 cup light mayonnaise
1 tbsp. lemon juice
1/4 tsp. salt
2 pkgs. of sugar substitute
Toss raisins, carrots and pineapple together. Set aside. Stir together mayonnaise, lemon juice, salt and sweetener and add to carrot mixture. Keep refrigerated.
Nutritional Information Per Serving: 68 Calories; 2g Fat (25.8% calories from fat); 1g Protein; 13g Carbohydrate; 1g Dietary Fiber; 4mg Cholesterol; 129mg Sodium.
