Serves: 4

Exchanges: 3 meats, 1/2 bread, 1 vegetable, 1 1/2 fats

Ingredients:
1 red bell pepper, thinly sliced
1 cup broccoli florets
1 small onion, quartered
1 cup cooked cold spaghetti 2 b
1 lb. tofu, cubed 4 m
2 Tbsp. olive oil 6 f
1/2 Tbsp. fresh ginger, grated
8 oz. Parmesan cheese 8 m

Directions:
Heat nonstick skillet or wok to medium high. Add oil and onion and stir 2 minutes. Add pepper and stir 1 minute more. Add ginger, broccoli, and tofu and stir 2 minutes more. Add spaghetti and stir until mixture is thoroughly heated. Top each serving with 2 oz. Parmesan cheese.
