Exchanges: 1 meat, 1 bread, 1/4 fat
Ingredients:
4 slices diet bread
1 egg
1 egg white
2 tablespoons skim milk
2 ounces fat-free cream cheese
2 teaspoons blueberry sugar-free jelly or any flavor
1 teaspoon blueberry sugar-free jelly
Pam
Preparation:
In a small bowl, cream together cream cheese and two teaspoon sugar-free jelly. Spread on the bread, making two sandwiches. Beat together egg, egg white and skim milk (egg beaters or egg whites only may be substituted). Dip each sandwich in the mixture and coat each side. Place in a non-stick skillet sprayed with Pam and cook three minutes or until golden brown. Place remaining one teaspoon of jelly in a small bowl with one teaspoon of water and heat in the microwave until warm. Drizzle over toast and serve immediately.
Optional: Garnish with sliced peaches, bananas, or fruit of choice, served on top. (Be sure to count fruit exchanges, if garnish is added.)
