Exchanges: 1 1/2 vegetables, 1/2 fat
Ingredients:
1 cup fresh cauliflower florets
1 cup fresh broccoli florets
1 cup baby carrots, halved
1 cup grape tomatoes, halved
1 cup sliced mushrooms
1/2 cup chopped red bell pepper
1/2 cup chopped green bell pepper
1/2 cup chopped red onion
1/2 teaspoon Italian seasoning
1/2 cup light prepared Balsamic Vinaigrette dressing
Preparation:
Combine all of ingredients in a medium-sized container for 2-4 hours, stirring occasionally. Dressing will cook the vegetables and the volume will shrink. Great to have on hand for a snack attack.) Serving size 1 cup.
