Ingredients:
1 papaya
1 mango
1 cup of fresh pineapple
1 jalapeno seeded and minced
1/4 cup diced red bell pepper
1/4 cup diced red onion
Juice from half a lime 1/8 cup rice vinegar (or cider vinegar) 1 tablespoon red chili flakes 2 tablespoons fresh cilantro
Preparation:
Combine all ingredients and reserve. Makes 3 cups salsa. Serving size 1/2 cup.
This is great on top grilled marinated chicken ******* or fresh grilled fish. Pre-cut papaya, mango, and pineapple can be found in most large grocery stores now. I have also used the canned papaya and mango with good results. But use the fresh pineapple when you can.
